I Live Out Here In The Heartland
Dead Center On The East Edge Of The Plains
Hot Out Here In August
So We Keep The Grill Out Side The Back Door
We Do Much Of Our Casual Daily Cooking Out-Side
So We Don't Heat The A/C In The House

Today, I've Got
Asparagus, Ears Of Corn, And A 2# Ohsee Ham
A Thirty Minute Cook At 250 Degrees

Flip Your Chimney Up-Side Down
(Folks, You Gotta Have A Chimney)
Load Your Charcoal On The Bottom
Pack Your Paper Up The Long End... Light The Paper

This Way You're Not Over-Using Your Fuel

Now On The Corn, I Peel Back The Husk
Remove The Silk And Roll The Husk Back Over The Ears
I Don't Get That Coveted Char Caramelization
But My Kernels Don't Shrivel And Dry Either
They Remain Great For Left-Overs
The Asparagus, Gets Olive Oil And Garlic Powder
I Put Those Straight On The Grating
And Roll Back And Forth With My Hand

The Ham Is Pre-Cooked
So I Only Need To Heat To The Center
And Caramelize The Sauce

When I First Saw Food Service Wearing Gloves
I Thought It Was For Food Sanitation
Maybe...
But For Me It's To Keep All That Crap Off My Hands
Never Cook With-Out Exam Gloves Anymore

Snag A Pocket Of 'Em At The Doctor's And Hospital
It's All Over-Head And They Throw The Stuff Away
The Nurses Gave Me Everything In My Room Saying:
"House Keeping Is Going To Throw Everything Away Anyhow..."
So Be It

Get Yourself Some Gloves

A Trick I Learned On Vacation And Fishing Trips
Clean-Up An Clear As You Go
It's Great To Sit Down To Eat
And Not Have Dishes To Do Afterward

Bon Appetit...

Here's a quick tip..
Dont call grilling BBQing.
Two totally different methods of cooking.
The Ham IS Being BBQ'd
And They Are All Being Alder Wood Smoked
...On The Grill

And Now I'm Eye-Balling Those Peaches & Plums
'Grilled Peaches, Plums With Honey....Umm...'

Just because you put a few pieces of wood on your fire doesnt mean you're BBQing.
And by the way, smoking a ham is not the same as BBQing.

Meanwhile:
I'll Be Enjoying Paper Thin BBQ Ham
Piled High On My Toasted Bread
BBQ Ham Sammich
With Corn On The Cob, Garlic Asperagus
And Finished With Charred Fruit And Honey
On Top Of Some Vanilla Ice Milk I Whipped Up

Words have meanings....
Especially when one is claiming to know what they're talking about.

I'm not trying to dog you, just educate you.

I've been BBQing for over thirty years some of those years competitively.

BBQ

I quit eating meat again recently.

That asparagus sounds good, though
I'm Not Vegan By Any Means
Not Because Of Dietary Restrictions (I Do Have)
I Just Don't Make Animal Protein The Star Of My Plate Anymore
I Just Don't Care For Large Portions Of Heavy Foods

...I'll Scoop All The Vegetables & Gravy Out Of A Pot Roast
Dump It On A Pile Of Mashed Potatoes

I Did The Same Thing With Artichokes
That I Do With Asparagus Back On The Fourth
....Along With The Brisket I BBQ'd

Well, my better half is a vegan, so that pretty much makes me one, too. I only eat it if I'm doing a mass gain. She doesn't give me a hard time about it.

That pot roast gravy and potatoes will stick to your ribs, though. Been there and done that about a gazilion times.

I know they know how to BBQ in Kansas city....that doesnt mean you do.
And I can assure you....you dont know more than me when it comes to any kind of cooking be it in the kitchen or outside.

Tips For The Quick BBQ

Quick and BBQ are a contradiction in terms

Exactly.
I love the fact Southern BBQ is becoming more popular but dont claim slapping some meat on a grill is BBQing.
Nothing could be further from the truth.

I just got into it about five years ago

I am far from an expert....but I like what I cook

I like my ribs better than most BBQ joints and think my rubs and sauces are better

Try for the Holy Grail of BBQ.
The Brisket!!!
If you can consistently turn out a good brisket you're a God when it comes to BBQ.
