Many ditch diggers (laborers) are also 'capable of much more". They've just chosen physical work as their occupation. Their average pay is also pretty good. Many begin as laborers then go into the building trades.

Jews are constrained by their culture to seek certain professions. The rest of us have no such constraints. I have the same intellectual capacity as do most Jews, but I prefer working in a shop rather than an office.
