As far as freedom of religion, Jews practically have 100% freedom to practice their religion. More so than other religions, because like us, they're monotheists and worship Allah, unlike the Christians who worship a man and his mother. The Hindus and Buddhists are also more restricted in what they can and can't do, but for the most part, they have much freedom. They can build their houses of worship, and repair them, they can have their own schools, religious institutions, and they can worship their god/gods.
If there are feasts, festivals, "religious pageantry", they can do it within their neighborhoods, or in certain areas allocated for them. Sharia is tolerant, that's why there are still Jews, Christians, and Hindus in the world, despite living for centuries under Islamic rule.
Muslims who study Sharia, like myself, consider it an honor to be a good steward of the people of the book, being merciful to them. That is the hallmark of a true Muslim, one's tolerance of minorities.

Are there problems? Sure. Muslims aren't angels, we're not perfect. But Sharia attempts to mitigate these societal problems, whenever possible without violence. The Orthodox Jews, when they're in a position to rule, enforce Torah, they're much more violent than Muslims. Muslims, even "fundamentalists" like me, are way more tolerant than Orthodox Jews, when we're in charge. Much more lenient on many issues, because we realize that "Tikun Olam" is a process, it's not going to come about through oppression, or unmitigated, widespread, violence.
