I hunted a lot in N. Minnesota mostly duck and grouse, but I knew nothing, (just a partier), could never cook wild game, much less dress a bird properly. . So I can see you are a legitimate hunter who knows a lot. . I bet I would like turkey as you put it, even squirrel (never tried) or bear. But I like duck, too. . Albeit most hate it. And geese, as you put it, even less.OMG.....Duck?
When I was about 10 or 11 I was squirrel hunting next to the creek and two mallards took off and I got them both.
I dressed them out and my grandmother cooked them up for supper.....It was OK but I never killed another.....At least they are far and away better than a damn goose.....One and done with those nasty fuckin' things.
The secret with wild turkey is to use a baking bag and cut 1/3rd off the per pound cook time and go totally by internal temp......GTG.
To be honest I like just slicing/pan frying the breast and use the rest for a hearty soup after it's reduced.
Black Bear sucks major ass.....Every time there is a wild game supper in my AO I try it.....The "best" was a haunch that was smoked....I even finished a serving of that but the rest just gets bigger the more I chew..I hunted a lot in N. Ok, last comment. I am relying on others again telling me that bear is kind of greasy but they like it. I tried it as a kid and really cannot remember my reaction. I find it very interesting what you say that most birds or animals avoid devouring a dead bear. Just about everything else gets eaten by scavengers. Now when it comes to venison, moose or elk, if cooked right I love venison and moose. I've found a couple bear in the woods dead and the only things that eat them are the maggots and carrion beetles.....They literally melt into the forest floor. I'll go back in the Spring and salvage the skull when i'm out spring gobbler hunting.
