Noting the most likely target for an Iranian missile would be Israel, Poland is way out of the freaking way to do anything about that. Also, their isn't much of a "system" to understand. The thing doesn't work.

The US is a global power. Arguably the only global power. As we see, what goes on in a jerkwater like Afghanistan can have repercussions for us here at home. Similar all around the world. Curiously during the Cold War no one questioned this.
Involvement in foreign affairs achieves the goal of expanding influence. Withdrawing from foreign affairs does not.

This particular system has two major functions - detection and interception. For these functions of this system to operate effectively, a certain time-in-flight of the target is required for effective interception. The trajectory of an ICBM launch from Pakistan or Iran would require that the missile travel over Europe, so Poland is a strategic location for this system.
