I have not found stainless steel to be as satisfying as cooking with cast iron, but like you, the cast iron has become uncomfortably heaven at times, so my favorite cookware now is copper--I have been gifted with a good supply--or my non-stick T-fal skillets (they are quite safe until the coating begins to wear at which time they should be replaced) plus I have three different sizes of electric skillets if I am cooking something I don't want to have to tend carefully. I use my cusinart stainless steel saucepans almost exclusively for cooking sauces, soups, stews, or anything else that could leach metal though.
Stainless steel has one advantage over carbon steel, it can handle acidic foods much better. Acidic foods can strip the seasoning off carbon steel pans so they have to be re-seasoned. With heat transference carbon steel is better, heat retention is about the same with both. My 12" is a Calphalon and I never really liked it. With pots most of mine are old to not as old, well used Revere Ware that are still in very good shape.
 
I've been cooking with cast iron skillets for years now but honestly I'm not as strong as I once was and especially that 10" skillet is heavy....... So I'm now considering a good set of carbon steel skillets (8" & 10"). The OXO brand is rated very good, pre-seasoned and one of the less expensive choices, $40 for a 10" and $30 for an 8". Most sets include a 12" but I have a 12" anodized aluminum skillet which I never use so it's kind of a waste for me to buy one that size. Matter of fact I forgot I even had the 12" until a few days ago when I pulled out a couple of stock pots and saw it hiding behind them....... :lol:
I'd save the smallest of them. If your diet has an iron problem, wouldn't you think an iron skillet might contribute iron? I've noticed a lot of multivitamins lately ignore iron as a necessary nutrient for energy and strength. If you're feeling not as strong as you used to be, there is a nutrient you can buy in pill form called "kelp." I hope you get some if it helps.

Yes I know and aluminum, while it is excellent cookware providing even heat and all that, has some issues that seem to associate with some health issues so I avoid using it when cooking anything that can etch or leach the metal like tomatoes or vinegar etc. And when the non stick coating shows any kind of deterioration, I replace the cookware because I don't want us consuming that stuff either. But for quick frying, pan searing, scrambling eggs and such, yeah. I use it.
 
You know, I know one flat earther who is a charming person, well educated, credentialed, intelligent, but belongs to a church that somehow convinced her that all the science we have re the structure of the Earth, our galaxy, the universe is a hoax. Her beliefs are what they are and they harm nobody so I just shrug it off and enjoy other things about her. So this is not intended to offend anybody who might belong to that particular club.

I remember, as a reporter on our college newspaper, covering a presentation by a high ranking official of the Russian Communist Party who had been invited on campus. (That was back in the days when universities exposed us to as many different world concepts as possible and taught us to think critically about them.)

After he had given his presentation about the philosophy and virtues of socialism/communism, he took questions from the audience. I don't remember what the question was during that part of the session, but it struck me that the supposedly anti-religion, Atheist communist replied, "God only knows." One of those moments that makes you go 'hmmm.'

Yes. I honestly thought my friend was joking when she mentioned it and joined in the fun. But it turns out she is an absolute believer. I have run into a very few others on the internet, mostly religion focused sites. They have photos, charts, graphs etc. that they believe 'proves' it. Again, most are lovely people and I just allow them their beliefs because I'm not going to be able to convince them otherwise. They are as convinced my beliefs about that are as wrong as I see their beliefs. :)
 
Oh and mak2 I seem to think you've posted in the Coffee Shop before, but if so I failed to get you on the roster. We welcome new members to the Coffee Shop and hope they'll keep right on joining in.

And newcomers receive a complimentary beverage. No clue what this one is but it looks good and was labeled 'tall drink Tuesday' :)

Miss Songie's litter of 9 puppies had one who stayed asleep when we called breakfast. He was sleeping too much and became the heaviest of all the puppies. It became clear something was wrong, and it became clear one day that he was deaf. So Mr. nap-loving Spotty got himself bitten all over by the other children/puppies one day. I've never had this problem before, but after that day, I started keeping him separated from the mob for a couple of days. Then I realized, both he and they needed help for getting along and accepting the issues and dealing with the problem. I carried out a very light-weight fly-swatter and it only took one swat of a first offender the next morning for all the puppies to "get it." No matter what their giant brother did, they knew they might get in a little unwanted trouble if they chewed on Spotty again. One of his ears really got chewed the day they chewed on him. Now, at least they think better of beating him up for nothing. I'm learning to give Spotty signals for No-no, come here, chow time, stay, "good boy" and "I love you!" He's so heavy I can barely pick him up to transfer him to another room or even out back. We had a fence put up.

My pal, Mr. Ken is in the hospital again. He finally says he is going to stop smoking this time. I think he's been in the hospital 5 times in the last couple of months. It's hard on health care people to deal with smokers whose life is threatened every single time they light up. :( I'm glad he's finally dropping the"Uncle X lived to be 79 years old and smoked 3 packs a day..." line. Thanks for the prayers up for him.

And, I planted a rose bush day before yesterday and worked on a baby quilt for charity several times this past week.

4 or 5 cars were carrying Vinyl Chloride. They did a controlled burn to clean it up and EPA is on site continuously checking air quality. The derailment was caused by an axel on one of the cars Sunday evening. People were told they could return Home last night.

Lots of different versions of the story out there it seems but hopefully your local news is the real story. That was no simple derailment it would seem and it would seem there was a lot of fire?

About a month ago, I was wandering around in Wally World and saw this "Blue diamond" small skillet that claims it is easy to clean. I took the bait. Not only do you not have to use any grease or oil of any kind, you can flip an egg in about a minute on medium heat, to cook the other side of the "fried" egg that does not use butter or oil. If you do, some of the veggie oils make cleanup a chore, because they coat the skillet with sticky stuff that you never saw on the 15-minute wash traditional skillets. I haven't tried pancakes yet, but if I did that, I'd prefer the large skillet with the flat, not rounded bottom. I have a whole lot of pots and pans I will likely never use again. Oh, well. GoodWill can always sell expensive pots and pans for a small price to a family that has nothing but a lot of mouths to feed after the spend everything on food but have nothing to cook it with. I will need to keep the old stew pot, however for my own Mulligan Stews.

Lot of fire some set on purpose. Fact is it could have been worse. I expect several lawsuits... my house is 10 miles away from this one but we have tracks about 100 yards from the house.
