Thing was the UN deal was going well and Trump had an offer on the table from Iran to stop any Nuclear development.

The "UN deal" (JCPOA) was over, it expired. Iran never committed to stop nuclear development, they believed they had every right to develop nuclear weapons.

Jarad and Witkoff wanted a war and they led Trump into it... I don't think Trump knew what he was getting himself into.

The USA, with their allies, attacked Iran, started the war of aggression. Therefore, Iran, as defender, has legal right to fight back both USA and it's allies, who didn't declare neutrality.
Were Turkey and Cyprus neutral, or they were parts of hostile to Iran military alliance?

As far as I know none of the countries Iran attacked were involved with the US attacks on Iran's military and nuclear enrichment facilities.

They are still allies of the USA, still didn't declare neutrality and didn't intern US soldiers. Very few of NATO members openly banned US usage of their airspace and other resources for attack on Iran.
