Annakin Skywalker was a Caucasian character because Sebastian Shaw was cast to play him. There is absolutely nothing in lore or history that demands any characters in Star Wars be any race at all. "Star Wars", being true fantasy, he could have been Green.

We find out later, in the Prequels, that Anakin and his baby momma were both White so Luke being White isn't controversial. However, at the point in the film series when he was introduced, he could have literally been played by anyone.

True Anakin could have been anything, but once cast he was played by Caucasians until the end of episode 3, when he suddenly went Porgy and Bess.
