The sin of knowledge

It seems to me the quotes you posted are more about good works than about knowledge. If many Christians worried about their own good works as they do about what others are doing, the world would be a better place.

Anything good, anything evil was created by God why did God want to hide the knowledge and keep humans dependent on him while not allowing their intellect to grow?
You're talking as if God is like you, a human, and that he created you with no special purpose.
 
knowledge itself is not a sin, but knowing what is good and what is evil and then choosing evil, that is sin.
 
To have the knowledge of good and evil one is no longer covered by grace. Thus a fall from grace as the human learns to overcome the carnal mind and thus as Paul said, I die daily. Each day Paul would wake up and put those thoughts of the carnal mind aside and the old Adam-human in him would die a little more as the new human born of the Spirit is brought forth in the image of the firstborn of God.
 
If knowledge were sin, then God himself would live in sin. When Adam and Eve partook of the tree of knowledge of good and evil, God said:

Genesis 3:21-22
21 Unto Adam also and to his wife did the Lord God make coats of skins, and clothed them.

22 And the Lord God said, Behold, the man is become as one of us, to know good and evil: and now, lest he put forth his hand, and take also of the tree of life, and eat, and live for ever:

Knowing good from evil is an attribute of God and is not sin. However, once you know the difference between good and evil, choosing to do evil is a sin.
