Slice onions, place in oil or butter, saute until translucent.

Add a tsp of sugar and some flour, turn up the heat and cook until start to carmelize.

Deglaze with red wine, add a few cups of vegetable or beef stock. Pour into greased baking dish, put sliced, toasted french bread and sprinkle liberally with cheese.

Bake until cheese is completely melted.

Youc an use beef broth, if you like.
I like mozzerella but I'm using cheddar tonight since that's what I have.
 
I love swiss, too. I usually use what I have on hand, though. And that's mozzerella or cheddar.
 
childhood experiences have left me with a deep hate of soups....there are few soups i will eat....mainly hot and sour...and when really sick...tomato made with MILK **** that water mal...

other than that i dont eat soup
 
I love onion soup. It reminds me of drunken nights in Monmatre trying to convince the Frogs I was not actually a white guy in the military but rather a negro jazz singer.

I even pulled it off once or twice.
