Didn't know what to do with my leftover wonton wraps that they claim to be only good for 10 days- froze some used some, but when I thawed the stashaway portion I still had too many. I also had Ricotta left over from my Calzone so being nicknamed the McGyver in the kitchen I got creative, this is the recipe:
preoare the ricotta simply with a small half a cup of Ricotta, 1 capfull of vanilla extract, 1 heaping tablespoon of sugar and mix well.
Fully Wet the wonton wraps in water (or red wine with a pinch of cinnamon if making it like canolli style- that's the secret to the taste of the shells) place the shells in silicone muffin trays or round cups, I use 3 small round silicone holder cups that fit my air fryer. Place the wet Wonton wraps into the silicone cups and smere a little butter in the wonton cups and air fry 4minutes at 350 to toast the cups, then when done place spoon fulls of the sweetened ricotta in the now crisp wonton cups and air fry another 4 minutes and the silicon cups will allow you to lift up rhe cups when cooled down without sticking.
These are like open faced cheese blintzes so you can top them garnish them with berries or sour cream dollop.
For canolli style finish them with a few small dark chocolate chips.

Sounds good. I probably would have found a way to work some hot peppers in there. Also, it is expensive, but if you can find it, someone makes real vanilla flavor that is almost too thick to pour out of the bottle. Way better than the fake crap.

No I like those big plastic bottles from dollar tree
( From the past- brand might have changed) better than those tiny glass
?morton? bottles or anything else.
It's hard to mess up vanilla.
I use a little of it in my pancakes as well, with a little sugar to give it some taste/ flavor.

Yeah pepper can be used as a side dish without sugar, but I was going for a treat, I make my sfogliatelle filling with ricotta, so I'm used to making cheese cake like danish desserts using it as well as cheese knishes and blintzes.
