But there was never any attack on poll watchers, ie forcing them out of authorize observation zone, physical intimidation, and conducting secret, late night ballot counting sessions. So, because of these and other tactics(computer fraud), it is possible that 100's of thousands of votes were stolen/fabricated.

That is where Karl Rove is 100% wrong. Most recounts find a small percentage of mistakes or fraud, and the final results do not change. This will be different.

But I digress....the USPS has a record of every piece of mail that goes through their sorters....I know because I was an engineer for Siemens-Dematic that bought out Electro-Com that manufactured these mail sorters. The OCRS (optical code readers) and BCRS (bar code readers) read outs are kept in a data stream (you can thank the PATRIOT Act for that) since every mail-in ballot would leave a data trail that at the very least could verify how many ballots went through them?
