Could the US defeat China in a CONVENTIONAL war?

Because that's all we wanted to do. That was a political decision to keep Russia out of the war. It was decided to just restore the original border rather than conquer North Korea.
OK, why are you such a historical know-nothing? The UN forces had driven the North Koreans all the way back to the Yalu River, which is the border with China. That is when the Chinese decided to throw their troops in the mix.

Yep, and when the UN forces counter-attacked, the decision was to stop at the thirty-eighth parallel, the original border, rather than conquer North Korea, possibly bringing the USSR into the war. The Soviets were already providing the DPRK with supplies, weapons, aircraft, advisors and combat pilots.

The Chinese had made the decision long before that. They had moved over a quarter million troops into North Korea and were waiting for the right opportunity to push them into combat.
 
Invading them would be stupid. Them invading us would be astronomically stupid.

You can't compare Liberty Ships to modern ones. The Liberty Ship was a British designed copy of a cheap tramp steamer. It was slow, relied on cheap vertical triple expansion steam engines that a three-year-old could be taught to repair and operate. The original Liberty Ships took far longer to build, the first Liberty Ship, the Patrick Henry took 244 days from keel laying to commissioning. Modern ships are much larger and use highly complicated specialist marine diesels. Chinese shipyards wouldn't survive long enough to build an invasion fleet.
Plus if you look at their history, they have had zero interest to occupy countries far away. On their borders, yeah, they even tried to occupy Burma I think.

Even the attempted occupation of Japan, that was really Mongolian.

Well, we do have one advantage, which is a long history of fighting overseas wars and our military being integrated with our army, navy, air force and the marines to do that. China would be hard to invade conventionally, but they aren't nearly as experienced. In fact that we don't really know how they would perform is an advantage they have.

But no, I would not be optimistic either. Our military is based on wars with lesser powers or nuclear

There is no such thing as an all out conventional war. It’s either all out war……or not. We should never do an all out war.

Secondly, the war in Ukraine is an example of how large numbers of troops and machinery is a disadvantage to technology. Putting even 100,000 troops in one area becomes a tempting target for a drone or just one fighter with cluster bombs. Ukraine is winning because it’s using small group, low profile hit and run tactics supported by technology. Russia is losing because it consolidates equipment and soldiers. ..

No, everyone knows the UN forces pulled back to the port of Pusan and held there while the US built up for a counter offensive. That landed in North Korea at Inchon. The UN drove the North Koreans all the way to the Yalu while the PLA massed troops in the mountains of North Korea while good old Dougout Doug ignored all the intelligence indicating that. The PLA pushed the UN back into South Korea and after a see-saw series of offensives the UN stabilized the front on the 38th parallel. That choice was made to prevent the Soviets from coming into the war to support the Chinese if the UN forces invaded China. The UN command decided to leave North Korea intact rather than fight an all-out war with both the PRC and USSR.
