1. If video shows actual theft it is automatic call of the Police and never confront the individual.

2. Termination should be immediately and not at the end of the week.

3. Sell your business and move to the Philippines and live on that cash for the rest of your life.

Fire him. Save the video if he ever dares to challenge your decision to fire him. Make zero threats about having him arrested or about having him prosecuted.

Also, consider having a lawyer give him a letter (with proof of service) which you will retain for future reference about how he is banned from the premises and he will be charged with trespass if he ever shows up there again.
