I used to have a neighbor named Zoe.

We just pronounced it Zo. (with a hard "O" and no "E".
That’s how I always assumed it was pronounced

If the ‘e’ is going to be pronounced, it ought to have an accent mark in it like é or ë.

Otherwise the e is silent

I haven't seen him contribute anything to a conversation in 15 years.
When he does, I find him insightful. But it bugs me when people just blanket “dislike” without any actual debate
 
I alternate. Half the time it rhymes with Joe and half the time it rhymes with Shoe.

I know and have known soooooo many people named Zoe. Your cat has the correct pronunciation.
You’re right, it does, because he spells it with a ‘y’ at the end
