Anyone have a source for beef and veal shins?
Going to give home made Demi Glace a shot now that winter is upon us and a few days in the kitchen isnt an issue.

It appears to be more time consuming than difficult.

I recommend this book on sauces. It starts with the mother sauces and builds from there.
