If the Republican candidate lost a state they won because counting had to stop at midnight on election day because some precincts in heavily conservative counties were late in submitting their returns, you'd be cool with that?

Again...the real (and pretty much only legitimate) concern with ballot harvesting is the possibility that ballots can be dumped.

But even that can be dealt with by requiring ballot collectors to sign off on each ballot and some sort of acknowledgement sent to the voter once they are recieved

It depends on what you call fraud. In your mind it is perfectly alright for a person to talk people into voting for who that person wants the others to vote for (such as in assisted living facilities, nursing homes, and apartment complexes) and gather up all of those ballots and drop dozens or hundreds of them off, somehow not dropping off any where you know that the individuals didn't vote for the person you wanted. Or, you could gather all of those ballots up from the other side, pretending you are with them, and purposely not drop any of the ballots off at all, making hundreds of people think they voted when they actually didn't. So they wouldn't find a way to vote because they mistakenly believed they already had. All of that is perfectly fine with you.

Your system allows someone to canvass areas, talk vulnerable people into voting for who YOU want them to vote for and then drop off hundreds of ballots. Or, your system allows someone to pretend they are on the side of a canvassed area, get their ballots, let these people believe you will be dropping those ballots off, and then not drop them off at all.

I'm not saying the postmark thing would be a law, just as strong warning to mail at least a week before election day because votes received after election day will not be counted. There is no reason why mail in votes can't be counted as they come in, although I would favor the count not being made public before election day.
