But he did explain the symbolism in John 6:68 to the disciples that remained. After he explained that his words are what give life he asked them if they would leave him too to which Simon Peter replied;

"Lord to whom shall we go? Your WORDS are words of eternal life. We have faith and know that you are the Holy One of God."
And yet... many [of] his disciples returned to their former way of life and no longer accompanied him. John 6:64-65

Flesh is flesh. He let disciples walk away rather than to soften his stance and make it symbolic. He was given an opportunity to soften it and instead he reinforced what he said by saying the flesh is of no avail.

Some of his disciples were shocked by it too.
