The original Constitutional is relevant; The original Bible isn't. Why?

Why is it despite centuries of editing the Bible, interpreting the Bible to suit, most would say the original text is what matters. Yet doing the same thing to our Constitution, only the very latest version is what matters (at least legally?)

The latest version of a Bible will always get compared to the original (ignoring for the sake of illustration most can't read the originals including myself.) Where they differ, the original is what'll be relied upon as authoratative most of the time. I myself rely upon actual Torahs and Tanachs when consulting OT portion things, not any actual OT. And if (for some strange reason) consulting the NT I usually try using the older versions (pre-KJV.)

Why don't we do as we do for our founding documents and use Bibles that reflect the very latest interpretations? Why is older better when it comes to religion?
