Basic Risotto

Slowly adding hot broth to arborio rice helps release the starch from the rice, giving risotto its characteristic silky, creamy texture. We add a splash of wine along with each addition of broth to give the dish a more pronounced wine flavor. If you'd prefer the wine to be more subtle, add the entire cup at the end of Step 2 and cook, stirring, until the liquid is absorbed, then begin adding the broth. If you prefer to omit wine, use more broth in its place. Source: EatingWell Magazine, January/February 2011.

 
I love risotto!

I don't have a 'recipe' per se, because I'm not one who measures when I cook.

Haven’t cooked it for years, but I always used Arborio rice.

I think I might go out later and eat it. I’m surrounded by Italian restaurants.
 
I use Basmati rice.
It is healthier and honestly, you would be pressed to tell the difference other than the shape of the rice.

I love Basmati rice - my rice cooker has an issue with it :(

My rice cooker also had problems cooking Basmati rice because it can be kinda sticky and gummy.
It's supposed to be really heathy, but I find it too chewy for me. ... :cool:

I think my rice cooker over cooks it ... I don't know, still experimenting. Maybe I need a new rice cooker!
 
I use Basmati rice.
It is healthier and honestly, you would be pressed to tell the difference other than the shape of the rice.

I love Basmati rice - my rice cooker has an issue with it :(
I don't use a rice cooker... cooking rice is very easy to do right.
The secret is bringing the water/broth to a boil - first. Then add the rice.
Also I add 2.5 cups of water instead of the traditional 2 cups to 1 cup of rice.

*Note this is talking about traditional rice not risotto

My rice cooker refuses to differentiate what kind of rice I'm wanting to cook!

It didn’t quite work out.

Risotto was off the menu. They only cook it during the winter months.

So I went for a gnocchi. Really good, with pesto , pine nuts, and parmesan shavings. Paired with a Malbec, and some add-ons: a street musician, and an informative chat with the Croatian waiter about the state of the Balkans; a very pleasant evening.
