He let disciples walk away rather than to soften his stance and make it symbolic. He was given an opportunity to soften it and instead he reinforced what he said by saying the flesh is of no avail.

There is nothing shocking about "bread from heaven" becoming "the flesh of Jesus" which is just a new metaphor for a new and far more satisfying revelation from God. It makes perfect sense and actually reflects otherworldly wisdom and knowledge worthy of a loving and benevolent God.
