What is The Best Pie For Thanksgiving?

IMO, while I love plain pumpkin and apple pie, they are both so passé and over-hyped now that I'm simply burned out on both of them for big holidays. If someone brings me another plain pumpkin or apple pie (especially store-bought) for holiday dinner, I want to throw it out the window and let the cats eat it! In my book, anything but pumpkin or plain apple pie please. I want something fruity and light. So that also leaves out the plain, common heavier pies like sweet potato and chocolate or pecan pies.

There are many far better choices. Holidays deserve something special.

For Thanksgiving, pies I'm considering and would prefer including:
  1. Butterscotch Pie
  2. Cranberry Apple Crumb
  3. Cinnamon Roll Apple Pie
  4. Ancho-Chile Spiced Pecan Pie
  5. Cranberry-Orange Pie
  6. Nantucket Cranberry Pie
  7. Cherry Crumb Pie
  8. Double Cherry-Almond Slab Pie

I make a mixed berry pie with fresh blueberries, raspberries, black berries, strawberries and huckleberries that seems to go over well. The kids like pumpkin and apple pies, but I'm with you, I'm not much of a fan. On occasion I will make a huckleberry cheesecake, but last time I did it, everyone said it was too rich. I am going to look for a recipe for your orange-cranberry pie---I make an orange-cranberry bread that everyone seems to like, but I've never attempted a pie, sounds delicious. The cherry almond pie sounds good as well.
 
Pumpkin or sweet potato or pecan or good old Apple pie. From the list the apple cranberry crumb would be a traditional choice.
 
PEACH Pie

Peach pie is OK but still kind of plain. I want a pie that surprises my guests and is something they have never had before--- a taste treat.

Apple-Pear might be an option. I find cooked peaches a bit wet and limp.

A holiday pie should have your guests asking: "Wow! What is this? This is great! I never had pie like this before, can I have the recipe?!"

Directions​

  1. To prepare pie dough: In a large bowl, whisk flour and salt. Add butter, tossing to coat with flour mixture. Cut butter into flour using your hands or a pastry cutter, until butter pieces are about the size of peas. Make a well in center of flour mixture. Add ice water. Use your hands to combine, kneading lightly and adding more water if needed. Dough should be uniformly combined and hold together easily but not totally smooth or sticky. Form dough into a disk; wrap tightly with plastic wrap; refrigerate at least 30 minutes.
  2. Preheat oven to 425°F with rack in lower third.
  3. Roll out dough. Fit into a 9-inch pie plate, crimping edges as desired. Top with a square of parchment paper slightly than pie plate; fill with pie weights. Bake 15–17 minutes or until edges appear set and are just starting to lightly brown. Remove from oven; remove parchment and pie weights. Return to oven; bake 2–3 minutes or until bottom appears set. Combine egg and 1 tablespoon water. Brush over bottom of crust. Cool completely.
  4. To make the cranberry filling: In a medium pot, mix the cranberries (and any juices from thawing), orange juice, granulated sugar, brown sugar, cinnamon, ginger, cloves, and salt to combine. Cook over medium heat until the cranberries begin to soften or break down, 12 to 15 minutes. Reduce the heat to low and continue to cook, stirring frequently, until the mixture has thickened, 6 to 8 minutes; some of the berries will break down and become jammy, some will be whole or in chunky pieces. Stir in the vanilla. Cool completely.
  5. To prepare the cream cheese filling: In a medium bowl, using a silicone spatula, stir the cream cheese until smooth. Add the orange zest and mix well, then add the powdered sugar and mix until fully incorporated. Add the egg, extract, and salt and mix to combine.
  6. Place the cooled pie crust on a parchment-lined baking sheet. Pour in the cream cheese filling and spread into an even layer. Freeze the pie for 15 minutes.
  7. Preheat the oven to 375°F with a rack in the lower third (preferably with a Baking Steel or stone on it).
  8. Spoon the cooled cranberry filling on top of the chilled cream cheese filling and spread into an even layer. Transfer the pie to the oven and bake until the crust is deeply golden brown (the filling will have sort of a matte appearance), 35 to 40 minutes.
Cool completely before slicing and serving.

Black raspberry is my favorite. Black raspberries are not easy to find these days though.

Cranberry Orange sounds enticing. With ginger and a hint of white pepper.

I have a dozen or so jars of cranberries I canned with this ^ ^ ^ ^ ^ and I can take one out and scarf it. (Skip the crust because I am intolerant of grains and nuts.)
