My ladies like my Italian Spaghetti & meat balls, Spanish omelets, and some flavored oils & sauces. I like everything they cook, so,.....they do most of the cooking, grill & BQ until I get a bug to make something myself. I am the inventive one in the family, so I came up with the grilled hacienda sandwich and marinated mushroom stuffed meatballs.
The Grilled Hacienda
Served on Sheepherders bread
Ingredients
Two slices Sheepherder's bread (Francisco International)
Butter
American (Choice) Cheese slices
2 Sliced jalapeño peppers
Thin sliced red onion
Cottage cheese
Chile powder
Butter one side of sheepherders bread slices. On dry side of bread, stack sliced cheese slices, sliced jalapeño peppers, sliced thin red onion, spread layer of cottage cheese, and dust with red New Mexico Chile powder. Grill each side until the cheese melts.
