What are eating right now?

I'm gonna make myself a late lunch, since I skipped breakfast this morning.

I know this probably doesn't sound good, but hear me out... lol.... for anyone who doesn't want to eat seafood anymore, you can make a plantbased "tuna" salad sandwich with chickpeas.

You mash chickpeas in a bowl...then add mayo, a little dijon mustard, chopped onion, chopped celery if you like celery (I don't), relish, salt, pepper, a little lemon.... and mix it all together. And put it on toasted bread, with tomato slices.

It is SO flippin good! And believe it or not, it tastes pretty much exactly like a tuna salad sandwich.

I'm going to make that now, since my stomach is growling. :)
Yes it does taste pretty much the same. And chickpeas have lots of protein -- cleaner and healthier than meat.

I didn't have it today, but I love falafels. Also made with Chickpeas

Ham & cheese omelette on a bagel spread with salsa Verde, and corn chowder with a little jalapeño in it. I likes me a Mexican breakfast!
 
I can eat salsa (regular kind; although I should try salsa verde some time) and hummus on their own.
I love it all. I's really more about what I pair things with. I recently tried a Turkish spread called labneh. It can double as a nice dressing for cucumber salad or even maybe put into tuna salad or something. It's a little bit pricey, at least where I found it recently.
