Cast Iron Dutch Oven, and I season it with Lipton dry onion soup mix. (GASP) Big onion cut into chunks, baby carrots, some red wine, pepper, Bay leaf. I've found browning is unnecessary. 350 for 15, 250 for 1 hour, 225 for 3 hours. Squashed Yukon Gold taters on the side.

It's like buttah!

Correct. Searing pot roast is unnecessary. As a matter of fact, there is lots of debate on the "searing deals moisture" myth.

And the soup mix works! Really.
