why is it so hard to accept that Evolution is how God created living things?

Not true, the Bible is ambiguous regarding how God created things.
The problem is, evolution doesn't explain creation. Evolution is something that happens to the things that are already created and existing. Life comes from creation and evolution comes from life.
The Bible is not ambivalent about evolution. It says God ripped a rib out of Adam and Presto! Eve. God created the world in what was it, 6 days?

The Bible does not say "God ripped a rib out, etc." that is your loose interpretation. As is your interpretation of "6 days" according to the creation story. The original Hebrew text uses the word "yom" instead of "day" and a "yom" can be anything from a day to an era of history. It is a highly unspecified amount of time.
One way we know the Bible can't be literally talking about 24hr days is because of the chronology presented. It wasn't until the third "day" that God created the sun. How can the Earth have what we understand as "days" before there is a sun?
Finally, we are presented this story as imagined from God's perspective, not our own. There were no humans here to record and document the events. The purpose of the story is not to evaluate the time line or critique the interpretations for factual scientific accuracy, it is to convey to people what God did.
