No. Gender in humans and animals is synonymous with sex, as you can see from the dictionary definition...What you learned in science class is that there are two sexes, not genders. Gender is not talked about in science. The two words should not be used interchangeably.

Don't be confused by grammatical gender where nouns in romantic languages are defined as male or female (and by the way, the words can't change the gender they were born with).
Gender identity is what you are referring to. It is a psychological term, and it is often thrown around by people who wish to normalize unnatural behavior and mental illness.
