God created the Heavens and the earth. < done, period.
If you look at the second verse, it says that the earth was without form and void. Void means nullified, canceled, revoked. God didn't create void. We know He created matter and mass.
So, go to the Hebrew. The word used for was is hayeta. < It means both was and became. It all boils down to translation.
The same word that was used in the description of the condition of the earth, is also used to describe what Lot's wife became. If you choose the latter translation, became, for verse 2 instead of was, then it would read, God created the Heavens and the earth, and it became void by the 2nd verse.
We do not know how much time lapsed between verse one and verse two. Did the war in Heaven continue on earth when Satan and 1/3 of the angels were thrown out of Heaven? For how long? For as long as the earth is old? If man was created 6,000 years ago, and the earth is billions of years old, then the war between God and Satan happened billions of years ago, as soon as the earth was created.
That is the Gap theory.

I have heard carbon dating does not work on rocks. Seems logical. They use organic material in close proximity to the rocks. Or in the rocks.

Carbon dating is for things that were alive. They use relative and absolute dating for things like rock.
