Mini-Cucumber pasta.

Super easy...
Buy a bag of these... ever wondered what they are?
Try this and you will find out.

Cut the ends off, then cut the skin off of one side, flip it down and cut it into thin-long sticks
Start boiling the spaghetti
While that is boiling, lightly oil a pan with olive oil on med. heat. Put in the sticks with some garlic, S&P.
You are just lightly cooking them to soften them, you want some of that crunch. If you cook them too long they become mushy.
Toss in some red pepper flakes. Remove from heat. The spaghetti should be about done.
Plate the plain spaghetti, toss the mini cucumbers over the top and squeeze some fresh lemon juice over it... this is not a step you want to skip. Put on a liberal amount of parmesan cheese.
Done.

Mini cucumbers have a crisp, tart flavor to them. They do not taste a thing like cucumbers because it is not a "small cucumber" it is an entirely different plant.
