First time eating a Big Mac in probably 25 years....

Back during the spring/summer of 1988 I worked at a McDs. Those were called the 10:1 patty. Quarter Pounders were 4:1 and yes, they haven't changed. What has changed is that McD's is using fresh patties for the Quarter Pounders now.
Yes...and honestly, I don't like them. They're WAY too greasy, I prefer the old patties.
 

Other brands don't either.
It has to do with the way they are cooked.
For instance the french fries... they are deep fried in very hot oil that obviously not only kills any microorganisms in it, but also depletes them of virtually any water molecules. They are essentially water free.
And what little water is still in it - dries rapidly in open air before new micro organisms have a chance to build up.
Where there is no water - there is no life.
