The countries chose to join with NATO while the Warsaw Pact was dissolved way back in the early 1990's as part of the settlement that NATO would not expand which freed a number of countries that Stalin had taken back in the late 1930's early 1940's since then Russia hasn't tried take any of them back.

When Ukraine and NATO announced the membership intent that crossed the red line as that would massively destabilize the security of the region which is a massive error on the part of the West pushing Russia into an existentional threat situation as a NATO base was intended to be placed near the Russian border thus imperil the existence of Russia.

It is well known that NATO isn't behaving like a defensive organization anymore not with the stupid unwarranted agressive expansion of membership that creates a surrounding of Russia, taking away the security buffer that was in place as designed in the 1990's.

Russia hasn't tried to take any of them back because (1) the inhabitants would fight and (2) NATO would engage the Russians... it sure-as-hell wasn't out of the generosity and goodwill of the Russian people and government.
