Vilsack says Trump won’t roll back healthy eating
Under Vilsack, USDA overhauled the school meals fed to more than 30 million children in the United States each day, mandating more fruits and vegetables and whole grains, while cutting back on salt, sugar and fat. It was a cause very publicly — and at times, fiercely — championed by Michelle Obama and derided by many Republicans in Congress.
The Obama administration has pushed forward a healthy eating agenda that spans far beyond school meals, Vilsack pointed out. Kids, particularly young ones, are now used to cafeterias with salad bars, and where a fruit or vegetable has to be on every lunch tray as part of the meal. The department has also put more produce in the Special Supplemental Nutrition Program for Women, Infants, and Children, which helps support half of all babies born in the U.S.
Also, most food companies have already largely adjusted and planned for all the nutrition changes, he said, rejiggering their pizza, fries and fruit cups to meet the tougher new standards.
