One bathroom down. Two to go.

The one I linked to from Costco is 30" wide and 22" deep. Would that work, or too large?

The size would work, but it’s not the right type of sink. She wants a vessel sink. All the vanities for vessel sinks I keep finding are 24 inches wide

Buy whatever vanity you like that fits your size needs. Sell generic top that comes with it. Get granite made to fit and buy the vessel you like.

Small gaps can be hidden with fancy trim/base molding that's stained to color match.

You can just sell whatever comes with the vanity you find. Granite can be cut and polished to any size
 
I've added 2x4's to the tops of vanities to raise the height of the tops. Then just got a fancy trim and installed it upside down over the 3 inch gap from the 2x4's
Then had new granite tops installed.
Saved the customers close to a grand in New cabinets that were taller.
Something like that could be hard to do with new cabinets though as matching the brand new finish could be tricky
