I am trying to put together this Nicaraguan menu. I'm not buying anymore cookbooks. I'm thinking about this:

Both of those require sour oranges. I may not be able to access those oranges.
I don't know what to serve with Indio-viejo. This will be either for Christmas Eve or Christmas.
