New York to ban teflon pots and pans.

I'm not the cook my mom and grandmas were. I always wind up sticking something to the bottom and have to scrub it off...lol

I found that all I needed to do with cooking meat in stainless steel was leave it there long enough, and as soon as it got a good sear, the pan would let go of it. I don't know if cast iron works the same way..

A good way to deal with something stuck to the pan is to deglaze the pan with wine or stock. Just search for the term "deglaze". Important technique for making sauces.


One thing I've never been able to cook in anything but non-stick is eggs. I got a frying pan from a company called Caraway, and they swear it has nothing harmful in it. Works well.
