The general opinion is that Apple computers are lightyears ahead in security beyond their competitors. There is a way to install Windows on an Apple computer. If you install Windows will you continue to keep the security benefits of an Apple computer or will this downsize your firewall and open you up to malware?

No. It's not the computer, it's the operating system. Apple runs the IOS operating system, and is a contained environment. Windows is also an operating system contained in it's own environment. Both have their own security platforms. It is true that the IOS platform is more secure, but it can be hacked.

It  can be hacked, but its much more difficult to hack an Apple, correct?

And when you disconnect from the internet you are truly disconnected from the internet? No secret connection running in the background?
It could still be accessed by bluetooth devices if you have bluetooth turned on.
And if it is a laptop, the wireless access could still be hacked unless you disable it
