The following article covers South American people who seemingly have evolved to be able to drink water laced with arsenic. Apparently this happened 7000 years ago. Interestingly enough 7000 years ago man adapted to being able to digest milk, or lactose. Read the article is this really evolution?

Man has always been able to digest lactose, it's what babies drink. Some percentage, I think it was 30% or so, "grow" out of that and become lactose sensitive by adulthood though.

Apparently both are right. Lactose tolerance was usually weaned from adults until about 7000 years ago. Now most humans are tolerant but there are those who are still lactose intolerant.
