Maybe you need to have a different foundation to build your theories and beliefs on. For instance, why haven’t you included the violent killing of fruit and vegetables yanked from bushes and trees? Or the bugs you kill driving or being driven in cars, buses and planes?In our lifetime we consume tens of thousands of animals. Other animals kill other animals to live. The world is a violent place. Humans don't like this violence so humans created harsher methods of violence to reduce violence with police, prisons, war, guns, weapons, etc. Humans don't like violence so they create mass violence factories to process meat for us so we don't have to. (ever notice those serious contradictions?) Evil is necessary for survival for all species on the planet to maintain their existence. The human is no exception. The more civilized we become the more barbaric we become. Humans are without competition the most violent species. Enjoy your chicken that you eat tonight that was provided to you courtesy of a violent human hand. People are just evil. Sometimes the evil ones are on your side. Sometimes they are not. God or no God, the world is evil. Every human heart could be ruled by good starting today and every human in the world would be dead within a year. The violent animals would continue to thrive. The structure of the world is evil. Unless God is going to build a different world then I don't see what choice we have.
It is depressing trying to figure this stuff out. Just protect yourself and maximize your survival techniques.
My foundation is Jesus Christ. If I do as Jesus did while he was on the earth, I would not be evil. Of course, I fall short the glory of God as does everyone else.
I believe that your use of the word “violence“ is inaccurate. The word violence alone is not necessarily evil. Abusive violence is evil including against animals. “Abuse” requires intent. There is a lack of compassion and empathy when being abusive. The only goal with abusive violence is to inflict pain and enjoying their suffering. Sociopaths can do this.
So, why do we eat meat? Because we are carnivores to start with. And, we are hungry? If you don’t believe in God then those who have little hunt as in ancient days. The problem is we do indulge in meat. As the leader of a worldwide church wrote, “eat meat sparingly and in times of famine.” But, evil? There are better reasons to limit eating meats. Can’t really think of any off hand.
