We made bread cakes from the leftover breadcrumbs when making chicken cutlets. favorite part of the meal.
 
Oatmeal.

We also regularly had "leftovers casserole", back of the fridge stew, eggs/egg salad, and french toast for dinner.
 
You don't have to be poor to have fish cakes for dinner. My mom made salmon cakes for my Dad and brother because they both loved fish. Hers weren't that burned, though. And we had oatmeal sometimes, and now I'm hungry for French toast since I read that in a post. A little pat of butter and some warm syrup. Yum.

My mother made these for my daughter and me when we stayed with her for a few months while moving. My daughter could not get her fill. Maybe it was the way yours were made?
 
In our house it was "serve yourself night," where we could eat junk food, one item for the whole meal, cereal sandwich, whatever. As long as we could find it in the fridge or cabinets, and fix it ourselves.
 
15th post
Tuna casserole.... You can probably still feed 4 people off of it for $5 dollars today!

We had salmon patties, from canned salmon almost once a week....

Those Mackerel patties look really good to me....whomever made them, did a good job on holding their shape without breakage!
 
I don’t know what to call them

open faced hamburger bun with chipped beef slices and American cheese slices warmed in the oven til the cheese melts

My dad made this several times a week
