Does the law really mention 'sincerely held' as a qualifier? I also wonder who decides which beliefs are legitimately 'religious' and which aren't...

Anyway, it sounds like you're saying that we don't have to follow laws that conflict with our religious beliefs. But that's a misreading of the First Amendment. The irony is that declaring religion a protected class in the first place actually violates the First, which clearly prohibits Congress from making any law respecting an establishment of religion.
