Coddling....ill show you coddling it rich!

    What is up with all the coddling?


    Rich coddled eggs.

    Measure how much water you will need by placing the coddlers in a pan an filling it with enough water to come up about half way and bring the water up to a simmer.

    Generously butter the coddlers and put a tablespoon of cream into each. Add one large egg, and some salt and pepper. Screw on tops and lower into the pan of simmering water for 5 minutes...

    Remove from water and gently unscrew tops. Server with toast points.

    Now you have rich coddled eggs.


    Variations...

    adding a bit of chopped prosciutto
    A small bit of cheese of your choice
    chopped chives
    A small drop of black truffle oil
