Tomorrow I'm making homemade lemon cheesecake with vanilla wafers crust instead of graham crackers. I also cut the butter down with coconut oil ( not too much - add vanilla or lemon zest to offset the coconutty taste.)

I think I'll make some croissants today and tomorrow. It takes two days to make them. I think I'll fill some of them with chocolate chips and others with strawberry jam.
