The Book of Eli is probably the movie I've seen most often.Denzel Washington. Any of them except Training Day. Hated to see him play a bad guy when he is such a great guy.

For me....Hobbit movies. ALL of them. I can just put one of them on and do other stuff and KNOW where they are, what they say next, etc. Over and over I can watch them all. Back to back, then start all over again.

To re-state the obvious, I think we are referring to films that are so good that each time you re-watch it you see something "cool" that you missed on previous viewings. Hence, watching it again is edifying rather than boring.
