Smoked ribs by lunch (instant pot cheat)

Prepare as normal (marinate overnight, rub, etc).

Smoke per usual no less than 4 hours but no more than 5 hours.

Separate ribs and instant pot on high for 21 minutes... (don't crowd your IP... Leave half on the smoker and do two batches instead) ... with a cup of water and 3T cider vinegar.

If you want bbq glazed... sauce 'em and stick them under the broiler for a few minutes.

Did this last week with 6 pounds of boneless pork short ribs and today with a 6 pound rack of pork ribs. Delicious.

Mine was zesty Italian dressing marinade, grill mates mesquite rub over mustard and cherry wood for smoke... no bbq sauce.
 
Making these again.

This time no overnight marinade and with Boston Butt country style ribs ($2.79/#).

This is a little under $10 worth.

Mustard and rub...wild cherry smoke. A little more crowded than I would like...but that's the pan I had.

Put them on at 11am central. Might mop with 50/50 red wine vinegar and water + brown sugar.

With all the rain we have been getting, the cover rarely comes of my grill/smoker. But we have discovered a passable substitute.

I remove the membrane from the ribs and apply a rub. Then cook them in the Instant Pot for 30 mins. After they come out I slather them with our favorite BBQ sauce and stick them in the oven on Broil for 5 or 6 minutes to caramelize the sauce. Not quite as good as the all day smoked ribs, but damn tasty for the effort involved.

Nice. Have to give that a try... Maybe add some liquid smoke.

It's pretty amazing what am instant pot can do in such a short time.
 
3:40pm into the instant pot for 23 minutes. Used some of the mop instead of straight vinegar.

They stay together just like ribs should...these came out of the pot just like you see them above.

But just with the slightest pressure you can pull them apart completely with your fingers.

Not sure how much I liked the rub. Not nearly as sweet as I thought it would be.

We ate all we could...then pulled the rest (It is Boston butt after all) for pulled pork sandwiches for lunch tomorrow.

Made ribs tonight and remembered to get pictures.

Slather them with your favorite sauce....

Then eat!!!
