I've heard of that method but never tried it. I make tomato sauce frequently & only use San Marzano tomatoes inported from Italy - DOP certified. They're less acidic with hardly any seeds. But they can be hard to find & they're expensive. Most of the mass marketed canned tomatoes found in supermarkets leave a lot to be disired, imho. They're too acidic with too many seeds & some are not skinned. Use San Marzano & you'll know the diference & never go back. I love onions but I never put them in tomato sauce.

I wouldn't serve jarred tomato sauce to my dog.

Yeah, they are the best for canned.
Brand I get are "Certo".
