Yes, the the theory of evolution is akin to the law of gravity. And you are correct, it isn't both. The answer is that neither is "provable" in the laboratory although both can be observed.

They are akin since we can determine that each exists by studying the effect they have on our environment. Science has found substantial evidence that all life on earth is decended from a single ancestor and that gravity is universal. There are theories about how each works but the truth is we just don't know for sure.
