I keep trying to make falafels, but when I follow the Palestinian recipe, my damn kitchen keeps blowing up.


What am I doing wrong?

Every chef will tell you that, cooking demand some human emotion, I suggest some ignorance, try ignore it and everything will be just fine, in case you're not in the mood try selfishness and greed, Palestinian best.
 
Personally, I think Falafel is all about the toppings.

I don't normally make it, but when I do, I use Hummus, Tahina, Babaganoush, something that Israelis call "charif" which means hot (as in spicy.look up 'Harissa'), lettuce, pickles.

Damnit, now I really want a falafel. Bye !

Agreed. And I.P. pointed out the other sauce, tzatziki, the stuff made from cucumbers. Not sure if they use it in Israel. And don't forget all the pickled stuff they have as well. I can't remember, but _maybe_ pickled beets, pickled mangos, oh hell.

I just remember while they make it, they point at stuff, and I either said ken or lo. Then head over to the sauce and dump some on. Falafel joints over in Israel are kind of like going to a Subway here in the States.

Now I really want a falafel!

Nomnom, you make me hungry. We have a different kind of that in Turkiye. Its called as Icli Kofte or Kebbe.
