Easy to make carrot cake

You'll need a box of yellow cake mix (true value Walmart brand makes a good moist reliable easy prep one), cream cheese style frosting,
3 eggs, brown sugar,
Fresh carrots, crushed walnuts, and raisens ( white grape ones if possible).
You'll need vegetable oil (make sure it's fresh not sitting for months-oils like canola taste fishy after a few months stale) you'll need spices like Cinnamon, all spice, powdered clove, nutmeg.

Prepare the box cake mix as directed in your mixing bowl, but also add a teaspoon of brown sugar if you have it to add a deeper coloring and flavor, also put 1/2 teaspoon cinnamon,
1/4 teaspoon all spice, 1/4 teaspoon nutmeg,
1/16 teaspoon clove (it's very strong be careful to use that tiny measure spoon or a pinch).
Use a hand blender mixer if you have one, but don't add the peels of carrot yet otherwise it gets stuck to the blade leaving less carrot in your cake (found that out the hard way *L*)
Prepare your carrots first by washing & peeling of the scaly outter skin, then in a seperate bowl peel 1 large carrot into the bowl then chop up the long peels into shorter chopped portions and throw that in the prepared mixed batter, then throw in a handful of raisens and chopped walnuts then mix with a fork not the hand mixer.
Preheat oven as per box instruction add 25° if using your table top toaster multi use oven.
Pour into a lightly greased (using vegetable oil- or sprayed) pan.
Let cool before spreading room temperature frosting.

All these ingredients store for a long time to be used when you are out of desert and snacks in the house or when you get that carrot cake craving..
 
You can use spice cake mix as a base for fruitcake too. Throw in dried fruit, nuts, rum and yum.
