I eat hot dogs three ways -

1. With homemade Coney sauce

2. In a bread roll with butter, onions and tomato sauce

2. In puff pastry with onions. In a sense, hot dog sausage roll.
You probably wouldn't like the Chicago dog with sports peppers and onions but I love 'em. If you don't mind spice, I thoroughly recommend them.

I prefer Portillos. As for tamales, I like homemade.

Oh yes, Portillos. Great Italian beef and Italian sausage. There used to be one in Brookfield near the zoo I think. There was also White Castle and Cock Robin's but I don't think they served sauage. Out West was Russell's roast beef across from Skip's Fiesta.

I can do chillies and jalapenos, but where I can, just a small amount. Too hot spoils the enjoyment. I tend to use mild chilli powder and Kasmiri chilli powder when cooking.
 
I prefer a jumbo hot dog on a regular bun unless I have chili to pile on, in which the bun needs to offer some extra real estate.

My favorite restaurant hot dog joint is Ted's of Buffalo, NY. During our few years in New York back in the 60's my dad took us there a few times. I was pleased they had a place in Tempe, Arizona when I moved to the state. And they're finally constructing one nearby in Chandler after something like a 8-year delay since its announcement.
