Here, there, and everywhere.
A smooth, creamy potato and smoked haddock soup served with a freshly baked wholemeal soda bread.

Ingredients​

For the wholemeal soda bread​

For the cullen skink​

  • 50g/1¾oz butter, plus extra to serve
  • 1 onion, finely chopped
  • 1.2 litres/2 pints full-fat milk
  • 750g/1lb 10oz floury potatoes (Maris Piper or King Edward), peeled and cut into 2cm/¾in cubes
  • 450g/1lb undyed smoked haddock loin, skin and any bones removed
  • 2 tbsp chopped parsley
  • salt and freshly ground pepper.

How to make it:

 
Haddock Hack or Poor Man's Lobster

Dissolve one cup sugar and one cup salt in a half gallon of water.....Bring to a boil.

Drop Haddock cubes (1" X 1" or so) into boiling salt/sugar water a cube or three at a time while maintaining the boil. Adding too many will kill the boil.

Remove when the Haddock cubes float.....Dip in drawn butter.

Tastes just like lobster. ;)

This was really popular back when Haddock was one of the cheapest fish you could buy.....Oldsters might remember the frozen 2# "blocks" of Haddock at the store.....They were usually right next to the bait shrimp.
